Honey Walnut Shrimp

  • 1 Cup water
  • 2/3 Cup sugar
  • 1/2 Cup walnuts
  • 4 Egg whites
  • 2/3 Cup mochiko flour
  • 1/4 Cup mayonnaise
  • 1 Pound large shrimp, peeled and deveined
  • 2 Tablespoons RFC Hawaiian Tropical Honey
  • 1 Tablespoon canned sweetened condensed milk
  • 1 Cup vegetable oil for frying
  1. Stir together water and sugar in small saucepan until it begins to boil
  2. Add walnuts and boil for 2 minutes
  3. Drain and place walnuts on a cookie sheet to dry
  4. Whip egg whites in a bowl until foamy
  5. Add mochiko flour
  6. Heat oil in a deep pan
  7. Dip shrimp into mochiko batter and fry about 5 minutes or until golden brown.
  8. Remove and place on a paper towel to absorb oil
  9. Repeat until all shrimp are cooked
  10. Stir together mayonnaise, honey and sweetened condensed milk.
  11. Add shrimp and toss to coat with sauce.
  12. Add dried walnuts and serve
